Khao Suey is a traditional Burmese soup, made with coconut milk and topped with many delicious toppings, including fried onion, garlic, cilantro and more. It is a Burmese version of ramen, and has spices often found in Indian dishes. The curried coconut broth is served over noodles. This vegan recipe omits chicken or beef sometimes found in this dish, and instead of full of delicious veggies, including corn, broccoli and carrots.

Ingredients:
- 1 tbsp. oil
- 2 cups vegetable broth or stock
- 2 cans of coconut milk
- 1 pack of noodles, cooked according to package directions
- 4-5 dried red chilies
- 6 cloves garlic, shredded
- 2 inches ginger, shredded or chopped
- 1 carrot chopped
- 1 can baby corn, cut in circles
- ½ cup peas
- 1 small head broccoli, cut in florets
- 4 Thai chilis, slit in half and quartered
- 1 tsp. turmeric powder
- 1 tsp. red chili powder
- 1 tsp. coriander powder
- 1 tsp. soy sauce
- Salt to taste
Toppings:
- Fried red onion slices
- Fried garlic slices
- Fried peanuts
- Cilantro
- Red chili flakes
- Green onion
- Lime
- Crunchy onion (store bought, optional)
Directions:
1. In a wok or saucepan heat oil. Once the oil is hot add garlic, ginger, Thai chilis, red dried chilies, and the veggies. Sauté the veggies for about 2-3 minutes.
2. Add coconut milk, vegetable broth, and all the spices. Let the mixture simmer for about 3-4 minutes.
3. In a bowl add cooked noodles, top it with the coconut soup mixture.
4. Add toppings of your choice on top.
5. Serve hot and enjoy!
