This Superfood Salad is filled with delicious ingredients that help your body become healthier, stronger and boost your immune system. This salad was made with kale and greens from Lettuce Grow, as well as strawberries, blueberries, coconut, almonds, lemon, pomegranate juice and olive oil.

Serves 4
Ingredients:
For Salad:
- 6 oz. greens mix of baby kale, baby swiss chard, and spinach
- 1/2 cup blueberries
- 3/4 cup strawberries, sliced
- 1/4 cup shredded coconut
- 1/2 cup roughly chopped almonds
For Dressing:
- 1/3 cup lemon juice
- 3 tbsp. pomegranate juice
- 1 tsp. agave nectar or honey
- 2/3 cup olive oil
Directions:
1. Combine all salad ingredients in a large salad bowl.
2. Whisk the dressing ingredients together in a separate bowl and toss with the salad.
3. Serve and enjoy!
