The comfort of porridge gets a summer spin when topped with fresh berries. A dollop of yogurt, a sprinkling of cinnamon and a drizzle of honey or maple syrup completes this refreshing way to start your day.

Serves 2
Ingredients:
For the porridge:
- 1 cup wholegrain oats
- 1½ cups rice milk
- 1 cup water
- 1 pinch salt
- 1 tablespoon honey
- or
- 1 tablespoon maple syrup
To top the porridge:
- extra rice milk
- ½ cup fresh mixed berries
- 2 tablespoons Greek yogurt
- or
- 2 tablespoons dairy free yogurt alternative
- a sprinkle of cinnamon*

Directions:
To make the porridge:
Combine the oats, rice milk, water and salt together in a large pot over medium-high heat. Bring to a boil.
Turn heat down to low and add the honey or maple syrup. Cook, stirring, for 3-5 minutes, or until the oats are soft and the porridge is thick and creamy.
To complete the rice milk porridge with berries:
Spoon the porridge into warm bowls, pour over extra rice milk to cover, top with fresh berries and a dollop of yogurt and a little ground cinnamon, if desired.
