This Loaded Veggie Hummus Toast makes a simple and easy breakfast, brunch, lunch, snack or even a light dinner. Packed with plant-based protein, this toast is delicious and nutritious. Topped with mushrooms, tomatoes, onions, spinach and a dash of everything bagel seasoning, this toast has the perfect balance of flavors. If hummus isn’t your thing, you can also add the roasted veggies and seasonings on top of avocado toast.

Ingredients:
- Hummus of choice
- 2 slices of bread
- ½ onion, sliced
- ½ red bell pepper, sliced
- 3-4 bella mushrooms, sliced
- Handful of cherry tomatoes, halved
- Handful of spinach, chipped
- 1 tsp olive oil
- Salt to taste
- Black pepper to taste
- ½ tsp of red pepper flakes
- ½ tsp garlic powder
- Sprinkle of everything but bagel seasoning (optional)
- Cilantro, chopped (optional)
Directions:
1. Heat a pan. Add olive oil, add all the veggies except the spinach and sauté until the veggies are soft. (about 3-4 minutes)
2. Add salt, pepper, red crushed powder, and garlic powder. Mix well then add spinach.
3. Toast your bread slices. Spread hummus on top, add the sautéed veggies, sprinkle with everything but bagel seasoning.
4. Top it with cilantro. Serve hot!
