This recipe is simple and makes a delicious, filling lunch or dinner. Serve it on its own or over rice. Carrots, green beans and potatoes are infused with flavor from curry powder and cooked together to create a delicious meal.

Ingredients:
- 1 large potato
- 1 medium carrot
- 1 medium onion
- 2 handfuls green beans
- 2 tbsp. + 1/2 tsp almond oil
- 1/4 cup water
- 1 1/4 tsp. Himalayan salt
- 1-3 tsp. curry powder
- 1/2 tsp. turmeric
Directions:
1. Wash potatoes and carrots and dice it into cubes/small pieces.
2. Put the potato cubes and carrot rounds into a steamer. Steam them until they are just soft, about 5 – 7 minutes.
3. Chop onions finely and cut ends off the green beans and chop them in half.
4. Add 2 tablespoons of almond oil to a frying pan and add the chopped onion and green beans. Sauté on medium for about 3 minutes.
5. Add 1/4 cup water and 1/4 teaspoon salt to frying pan. Simmer for about 15-20 minutes until beans are nice and soft.
6. Add the potato and carrot to the beans and onions in the frying pan. Add curry powder, turmeric, and more almond oil.
7. Stir and sauté for another 5-8 minutes until the curry mixes in with the vegetables.
8. Add Himalayan salt to taste. Serve and enjoy!
