Loosely inspired by the candy version of peppermint patties, these no-bake, 100% plant-based Cocoa-Peppermint Power Patties give you all of the chocolatey and pepperminty flavors you desire. Plus, you can feel good about indulging in them!

Serves 6
Ingredients:
- 6 ounces dried pitted dates (the moister the better)
- 1/3 cup shelled hemp seeds
- 1/3 cup shelled salted roasted pistachios
- 1/3 cup natural creamy almond or cashew butter
- 3 tablespoons unsweetened cocoa powder
- 1 teaspoon pure vanilla extract
- 3/4 teaspoon organic peppermint flavor (non-alcoholic)
- 1/8 teaspoon fine sea salt
Directions:
1. Blend all ingredients in a food processor on low speed until well combined, but mixture still has some texture.*
2. Extra-firmly squeeze and roll mixture by hand into 12 balls, about 2 tablespoons (32 grams) mixture each. Then flatten into patties.
3. For best results, store in the fridge or freezer.
*Note: If necessary, add vanilla unsweetened plant-based milk by the teaspoon to achieve desired rollable consistency. However, if the dates you use are moist, there should be no need to add any plant-based milk!
