Cooking Tip of the Week: Don’t substitute tomato sauce for the tomato paste in this recipe. Tomato sauce contains too much water and might make your pita pizza soggy.
Food for Thought: Wouldn’t you like to thank the person who invented pizza? While we may never know the exact person who invented it, we do know that pizza originated in Naples, a town in southern Italy. The delicious combination of dough, tomato sauce, cheese and toppings made its way to the United States in the early 1900s by Italian immigrants and we’re sure glad it did! Although pizza has a reputation for being “junk” food, it’s easy to make a healthy version when you make it yourself. What are your favorite veggies to eat on pizza?
Family Dinner Conversation Starter: What countries did our family’s ancestors come from? What languages did they speak and what kind of food did they eat?
Ingredients:
- 1 can (6 oz.) low sodium tomato paste
- 1/8 tsp. garlic powder
- 1/8 tsp. basil
- 1/8 tsp. oregano
- 4 (6-inch) whole wheat pitas
- 1/2 cup Parmesan or dairy-free cheese, shredded
- 1 cup lowfat mozzarella or dairy-free cheese, shredded
- 1 onion, thinly sliced
- 1 tomato, thinly sliced
Directions:
Adult: Preheat oven to 400ºF.
Kid: Mix tomato paste, garlic powder, basil and oregano in small bowl.
Kid: Spread top of pita with 2 Tbsp. tomato paste mixture and top with Parmesan, mozzarella, mushrooms, onion and tomato.
Together: Bake 10-12 minutes or until cheese is melted.
