This simple dish combines fresh tomatoes, olive oil, lemon, cucumber, fresh parsley and mint for a delicious dish that looks like it takes a lot of prep, when in fact, it can be ready in under 10 minutes.
While you can buy a whole cauliflower and pulse it in a food processor, buying prepackaged riced cauliflower will cut down the prep time even more. Frozen cauliflower rice is not recommended as it is too watery. This recipe uses the cauliflower raw for maximum texture.

Serves 4
Ingredients:
- 2 cups of riced cauliflower (raw)
- 2 cups cherry tomatoes-halved
- 1 large cucumber-diced
- Handful fresh mint (minced)
- 2 handfuls of fresh Italian parsley (minced)
- Juice of 1 large lemon
- Olive oil, salt, pepper to taste
Directions:
1. Add all ingredients into large mixing bowl and mix.
2. Drizzle on lemon and olive oil. Add salt and pepper to taste.
3. Enjoy!
