Tofu scramble is a delicious, plant-protein-packed swap for scrambled eggs and can be enjoyed on its own, or swapped in for any breakfast recipe that calls for scrambled eggs! Try it in a breakfast bowl, breakfast taco or anywhere else you’d find scrambled eggs.

Ingredients:
- 1 block of extra firm tofu
- 1/4 tsp salt
- 3 tbsp nutritional yeast
- 3/4 tsp turmeric powder
- Pinch of smoked paprika
- Plant-based milk of choice, optional
- Any mix ins (spinach, chives, etc), optional
- Tortillas, optional
Directions:
1. Crumble block of tofu into small pieces with your fingers
2. Lightly oil a frying pan and add tofu, along with salt, nutritional yeast, turmeric and paprika. Sauté on medium heat until warmed all the way through, about 5 minutes. If it seems dry, add a splash of plant-based milk.
3. Add any mix ins you’d like and cook through.
4. To make easy breakfast tacos, top a corn tortilla with tofu scramble, or serve in any other way you’d like. Enjoy!
