Cooking Tip of the Week: Use roasted red peppers from a jar or make your own! Slice red bell peppers in half, remove the seeds, coat the peppers in oil and roast at 450 degrees for 25 minutes. Once the peppers have cooled, peel and discard the skins before using.
Food for Thought: “Marinading” is a cooking term for when you soak ingredients in a flavorful liquid for a few hours or even overnight. This allows the ingredients to absorb the flavors of your marinade before you cook them, making them even tastier! Vegetables, tofu and meats are all foods that marinate well. Usually, marinades involve an acid like vinegar, which helps make the food you’re soaking more tender, as well as strong flavors like garlic and herbs.
Family Dinner Conversation Starter: What is the funniest or strangest thing that happened to you today?
Ingredients:
- 2 Portabella mushrooms
- 1/2 cup balsamic vinegar
- 1/2 tsp garlic powder
- 1 tsp dried oregano
- 1 tsp dried basil
- Salt & pepper to taste
- 4 flour tortillas
- 4 slices romaine lettuce
- 4 slices roasted red peppers
Directions:
Kid: Slice mushrooms into strips.
Kid: Place mushrooms, vinegar, garlic, oregano, and basil into a bag and marinate in fridge for 2-3 hours or overnight.
Adult: Turn on grilling appliance (such as a Panini maker).
Together: Remove liquid from mushrooms and grill mushrooms for about 6 minutes or until semi-soft.
Adult: Heat medium sized pan to medium-high heat, and warm tortillas about 25 seconds on each side.
Kid: Place pepper, mushroom, and lettuce in wrap and enjoy.
