Food for Thought: The word “Florentine” means “in the style of Florence,” which is a city in Italy. It’s used to describe dishes that feature spinach, such as Eggs Florentine. The origin of the name dates back to the 1800s when Catherine de Medici, an Italian noblewoman born in Florence, married the king of France and became France’s queen. She reportedly loved spinach so much that she imported spinach seeds from Italy to France and brought in Italian chefs to cook it for her.

Ingredients:
- 6 hard boiled eggs
- 6 oz. spinach
- 1 small yellow onion, diced
- 1/2 tsp. garlic puree
- 1 oz. parmesan cheese
- 1.5 tsp. Dijon mustard
- 3/8 cup fat-free mayonnaise
- 6 slices multigrain bread
- salt & pepper to taste
Directions:
Adult: Hard boil the eggs.
Adult: Bring 1 inch of water to a boil in a pot with a steamer basket for the spinach. Steam spinach just long enough to wilt it. Drain and press dry with clean paper towels.
Together: Combine the eggs, spinach, onions, garlic, and parmesan cheese. Fold in the mustard and mayonnaise.
Together: Assemble the sandwiches. Serve fresh fruit on the side.
